NEARLY A CENTURY OF AUTHENTIC JAPANESE FOOD DISTRIBUTION
Established in 1926, Mutual Trading Co., Inc. began as a small co-op organization for centralized purchasing of basic import foods to service the needs of the early Japanese immigrant society in Southern California. Back then, Japanese rice, Miso and Shoyu were life’s necessities not yet available in the America.
In the 1950’s as commerce grew, hundreds of other Japanese products were added made up mostly of shelf stable, canned foods – everything from Tofu, Shirataki, Kamaboko, Matsutake mushrooms, and Sukiyaki no Moto. The world’s first canned Unagi Kabayaki was invented explicitly for US export, but nothing compared to the sensational arrival of pickled Takuwan, also in a can. Filling the void of the much-missed flavor and memories of their homeland for the Japanese, this period became famously known as the era of the “Takuwan Boeki” or the “Japanese Pickle Trade”.
With the advent of the ocean freight container system from the early 60’s, import of fresh chilled and fresh frozen foods became possible: Miso, Tofu, Udon, Natto, even fresh-frozen Unagi and fresh chill-packed Takuwan. Most significantly, this technological advancement in logistics gave Sushi its most important first step into the American marketplace by achieving safe distribution of fresh seafood ingredients for Sushi toppings.
In1964, Mutual Trading introduced Sushi to America, and in the 70’s became the first to freeze Edamame for import and commercial distribution in the US, as well as the first to bring in naturally brewed Junmai Sake. Mutual Trading now leads in the Japanese liquor category including Sake, Shochu, craft beers, wines, and spirits. Super-frozen facility and logistics for freezing seafood to provide freshness en par with what’s available in Japan started in 2003.
With aim to foster chefs of the next generation in global regions outside of Japan and to promote Washoku culinary culture, Mutual Trading founded the Miyako Sushi and Washoku School. Likewise, Sake School of America was launched to promote the understanding and fun of Japanese liquors.
