Inaniwa Udon is from Akita prefecture in northern Japan. Inaniwa style Udon is a hand-made flat noodle known for its silky-smooth texture due to the hollowness inside of the noodle. Prepare boiling water and cook the noodles for a few minutes, then drain the water and wash the noodles with cold water to rinse the sliminess. Serve hot or cold with tsuyu or dashi soup base.
