Katsuo no tataki is an altered form of sashimi, traditionally served with chopped green onions, grated ginger and topped with ponzu. When preparing for the tataki, katsuo loin (also known as bonito or Skipjack Tuna) are lightly seared over a fire to give it a slight smoky flavor. Then it is plunged in to iced water to stop further cooking, leaving the center raw.
