Yuzu Juice has been quite a cult ingredient lately. Yuzu is a Japanese citrus fruit (Citrus Junos (Rutaceae)) which is about the size of a tangerine and quite sour. Most commonly the rind is used to flavor various dishes such as vegetables, fish or noodles. Yuzu is difficult to find in the U.S. fresh but can be found as bottled juice or dry, powdered yuzu. Since fresh Yuzu is so uncommon in the U.S. bottled juice is used as an acceptable substitute in most recipes that call for Yuzu. Use yuzu juice in place of lemon or lime juice in savory dishes such as salsas or seafood dishes.
