Onsui specializes in their unique method called “Cho-Rei-Kun” when processing their Hamachi by using a smoke solution rather than CO gas to prevent oxidation and discoloration. While it normally takes more than 12 hours to process frozen Hamachi, Onsui completes it within 3 hours by using a special technique to draw the blood, resulting in more freshness and less drip. Onsui Hamachi is farm raised in Ehime, Japan and only those with 30% or more fat content gets selected.
