Shimano Hikari Somen is from Shodoshima in Kagawa Prefecture. This hand-made Somen noodle is known for its craftsmanship and quality handed over by their ancestors. By carefully selecting the ingredients (wheat flour, sesame oil, and sea salt) and drying under the sun instead of machine-dry, these noodles become beautifully white in color with smooth and chewy texture. Cook in plenty of boiling water for 2 minutes until the Somen becomes half clear. Rinse in cold water and serve with tsuyu or dashi soup base.
